Crockpot Meals
Red Sox Pot Roast
Lunch (serves 6)
2 lbs beef (top round roast)
3 carrots (cut)
5 potatos (cut)
2 onions (quartered)
1 cup far free low sodium beef broth
1 tsp garlic & black pepper
Put roast in first then add carrots, onions,
potatos and then add broth & spices.
Cook
for 8-10 hours on low
5 Clove Chicken
Dinner (serves 4)
½ cup dry white wine
1 tbsp parsley
1 tsp basil
1 tsp oregano
5 cloves garlic (crushed)
2 stalks celery (chopped)
4 boneless chicken breasts
2 tbsp lemon juice
put all herbs and veggies on bottom of crockpot. Top
with with chicken and lemon. Cook on low for 5-6 hours.
Dill Lemon Chicken
Dinner (serves 4)
1 cup fat free sour cream
1 tbsp dill
1 tsp lemon juice
1 tsp lemon zest (rind)
4 boneless skinless chicken breasts
Combine first 4 ingredients, add ½ mixture
to crockpot. Layer in the chicken and add the rest of mixture on
top. Cook on low for 4 hours.
Pork with Veggies
Dinner (serves 4)
1 lb pork roast (1/2 inch strips)
1 onion (chopped)
1 green pepper (chopped)
8 oz fresh mushrooms
8 oz can low salt tomato sauce
½ head cabbage (chopped)
1 ½ tbsp vinegar
¼ cup water
2 tsp Worcestershire sauce
Brown pork and place in crock pot, add other ingredients
and cook on low for 6-7 hours.
Spicy Italian Chicken
Dinner (serves 4)
1 med onion (chopped)
1/3 cup Just Too Good Italian dressing
½ cup water
½ tsp of paprika, garlic, chili powder and
pepper
4 boneless chicken breasts
1 tbsp corn starch
1 tbsp water
Spray crock pot with Pam and put in the first 5 ingredients.
Then add chicken. Cover and cook for 4 hours on low. In a pam combine
the corn starch and water and add some juice from the crock, simmer
on low then when thick pour over chicken, cook another hour and enjoy.
